Lemon Lentil Salad with Feta

Ingredients

1/3 cup lemon juice

1/3 cup chopped fresh dill

2 teaspoons Dijon mustard

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1/3 cup extra-virgin olive oil

2 (15-ounce) cans lentils, rinsed & drained

1 cup crumbled feta cheese (about 4 ounces)

1 medium bell pepper, diced

1 cup cucumber, diced

1/4 cup red onion, finely chopped

Directions

1. In a medium bowl, whisk lemon juice, dill, mustard, salt, pepper, and oil to make dressing. Set aside.

2. In a large bowl, add lentils, feta, bell pepper, cucumber, and onion. Top with dressing, then toss to coat. Serve cold.

Storage: Store leftovers in an airtight container in the fridge for up to four days.
