Broccoli-Cheddar Quinoa Bites

Ingredients

1/2 cup quinoa,

1/4 teaspoon salt

1 cup broccoli, finely chopped

3/4 cup shredded Cheddar cheese

1/2 teaspoon baking powder

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon ground black pepper

1 large egg, lightly beaten

Cooking spray

Directions

1. Preheat oven to 350 degrees Fahrenheit. Coat a 12-cup muffin tin with cooking spray.

2. Cook quinoa according to package directions. Transfer to a large bowl.

3. Add broccoli, cheese, baking powder, garlic powder, onion powder, pepper, and salt to the quinoa. Stir in egg and mix well.

4. Divide the quinoa mixture evenly among 8 muffin cups, pressing firmly into the tray with the back of a spoon. Mist the tops with cooking spray.

5. Bake until golden brown, about 30 minutes. Let cool in the pan on a wire rack for 20 minutes, then remove from the muffin tin.

Storage: Store leftovers in an airtight container in the fridge for up to four days. Reheat before serving.
