Loaded Veggie Sandwiches

Ingredients
Homemade Hummus
1 (15oz) can of chickpeas, rinsed & drained
3 tablespoons lemon juice
2 tablespoons olive oil
1 tablespoon tahini
1/2 teaspoon minced garlic
1/4 teaspoon salt
1/4 teaspoon black pepper
8 slices wide whole-wheat bread (toasted if desired)
1 avocado, mashed
2 cups mixed salad greens
1 medium tomato, sliced
1 cucumber, sliced
2 medium carrots, shredded
Directions
1. In a food processor or blender, combine chickpeas, lemon juice, olive oil, tahini, garlic, salt, and pepper. Pulse until smooth to make hummus. Place in refrigerator to chill.
2. Spread 2-3 tablespoons of hummus on one slice of bread. Spread 1/4 of the mashed avocado on another slice of bread. Top with veggies and close the sandwich. Repeat for the other 3 sandwiches. Store leftover hummus in an airtight container in the fridge.
Storage: Store leftovers in an airtight container in the fridge for up to four days.
