Cheesy Bean & Quinoa Skillet

Ingredients
2 cups water
1 cup quinoa, uncooked
2 tablespoons cooking oil
2 medium onion, chopped
1 teaspoon minced garlic
1 (15-ounce) can of no-salt-added sweet corn, drained
1 poblano pepper, chopped
1 medium tomato, chopped
2 teaspoons chili powder
1/4 teaspoon salt
1 teaspoon ground cumin
1 (15-ounce) can black beans, rinsed & drained
1 cup shredded cheese, divided
(Optional) salsa for serving
Directions
1. Preheat oven to 400°F. Coat a 9×13″ baking dish with cooking spray.
2. Combine water and quinoa in a medium saucepan and cook according to package directions.
3. Meanwhile, heat oil in a large skillet over medium heat. Add onion and cook for 3 minutes, stirring occasionally. Add garlic and cook for 30 seconds while stirring. Add corn, poblano, tomato, chili powder, cumin, and salt, and cook while stirring for 5 minutes. Stir in beans, cooked quinoa, and 1/2 cup of cheese.
4. Transfer to the baking dish and spread in an even layer. Sprinkle the remaining 1/2 cup of cheese. Bake for 15 minutes. Serve with optional salsa if desired.
Storage: Store leftovers in an airtight container in the fridge for up to four days.
