Strawberry Nice Cream
Time: 15 minutes | Yield: 4 servings
Ingredients
1 pound (16 oz.) fresh strawberries, coarsely chopped
2 medium bananas, peeled and coarsely chopped
1 tablespoon lemon juice
1/4 cup water (as needed)
Directions
1. Spread chopped strawberries and bananas separately in a thin layer on a baking sheet and place in the freezer overnight, for at least 12 hours. (You can also use pre-frozen chopped fruit to save time)
2. Add the strawberries to a food processor and pulse until finely chopped, about 10 pulses. Add the bananas and lemon juice and process until smooth, adding up to 1/4 cup of water as needed to reach a smooth consistency.
3. Serve immediately, or for a firmer texture, place in a freezer safe container for up to 30 minutes.
Storage: Store leftovers in single-serving airtight containers in the freezer. Let thaw slightly before serving.
