Asparagus is May’s Superfood of the Month! This vegetable is packed full of nutrients that your body needs.
Asparagus is a great source of folate, fiber, vitamin A, vitamin C, vitamin E, and vitamin K. Asparagus is also naturally low in calories and a great source of antioxidants. It comes in a variety of colors including green, white, and purple and is used in many different dishes such as frittatas, pastas, and stir-fries. When shopping, look for asparagus stalks that are firm to the touch, able to stand up straight, and have a smooth texture. Avoid limp or wilted stalks.
