September Recipe: Black Bean Burgers

These delicious burgers make for a quick and easy meal any day of the week.
Yield: 6 servings | Cook/Prep Time: 30 minutes
Ingredients:
1 (15-ounce) can of black beans, rinsed
1 cup cooked quinoa
½ cup panko breadcrumbs
½ cup chopped scallions
1 tablespoon no-salt-added tomato paste
½ teaspoon chili powder
½ teaspoon garlic powder
½ cup mayonnaise (or vegan mayonnaise), divided
½ teaspoon salt, divided
1 medium avocado
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro
2 tablespoons water
2 tablespoons olive oil
6 whole-wheat hamburger buns, toasted
6 thin slices of tomato
Directions:
- Place beans, quinoa, breadcrumbs, scallions, tomato paste, cumin, chili powder, garlic powder, 1/4 cup of the mayonnaise, and 1/4 teaspoon of the salt in a large bowl, and mash mixture together with your hands. Shape into 6 patties, then arrange on a plate and refrigerate for 10 minutes.
- In a food processor, combine avocado, lime juice, cilantro, water, and the remaining mayonnaise and salt and blend for 30 seconds or until smooth.
- Heat oil in a large skillet over medium-high heat. Add the bean patties and cook each side for 3-4 minutes or until golden brown.
- Spread the avocado mixture evenly across the tops and bottoms of the hamburger buns. Place the bean patties and the tomato slices on the bottom bun, then add the top bun.
