August’s “Superfood of the Month” is the bell pepper! This colorful vegetable is in season in Georgia during the months of June through September, making it the perfect time to purchase.

Did you know that green bell peppers are simply less ripe versions of the yellow, orange, and red peppers? As the pepper ripens and changes color on the vine, its nutrient content improves! A red bell pepper is an excellent source of vitamin A and has more vitamin C than an orange, making it one of the best food sources available. It is also fat free, sodium free, and naturally low in calories.

You can add bell peppers to chili, soups, sandwiches, wraps, salads, stir fry, and more! Look for firm, brightly colored peppers with tight skin. Check out this month’s recipe, “Turkey & Cheese Stuffed Peppers”, for a delicious way to incorporate bell peppers into your diet.
